Like a hash brown, these Carrot and Zucchini fritters are filled with grated zucchini, carrot, halloumi and spiced with garlic and dill for an easy-to-make flavour hit. Ingredients

1 zucchini

1 carrot, peeled

1 egg

2 tbsp plain flour

½ tsp garlic paste

½ tsp fresh dill

100g haloumi, grated

1 tbsp vegetable oil

Step by step

  • Carrot and Zucchini Fritters Recipe

    1. Grate or use a food processor to shred the zucchini and carrot; stand for 10 minutes and remove excess moisture. Place into a large bowl.
    2. Add egg, flour, garlic, dill and haloumi to zucchini mixture, mix until combined.
    3. In a large frying pan over medium high heat, add oil. Scoop tablespoon full amounts of mixture onto pan and cook for 3 minutes or until browned. Flip fritters and cook for a further 3 minutes or until cooked through.
    4. Serve warm with Greek yoghurt if desired.
